Macaroni Kid Cooks: Easy Peasy Guacamole

Get the kids in the kitchen - Create a Healthier Generation

By Macaroni Kid Kate May 4, 2017

Macaroni Kid is partnering with Produce for Kids to get kids cooking! I'm all about my son helping out in the kitchen - gets him involved in the process and allows me to showcase healthy habits. I accepted a challenge to create a family friendly recipe using Shuman Produce RealSweet Onions and can't wait to share our creation. My family had a blast brainstorming ideas and we had tons of fun in the kitchen too!

This easy peasy appetizer is kid friendly, fast and tastes fabulous! All it takes is a few minutes of slicing and dicing prep work and then I let my son takeover the kitchen

Ingredients:
(2) ripe avocados
(1) small RealSweet® Onion – finely chopped
(1) clove garlic – minced
(1) ripe tomato – diced
(2) tablespoons fresh cilantro – chopped
Juice of (1) lime
Salt to taste

Instructions:
-Cut the avocado and remove the skin.
-Place the avocados in a bowl. Mash with a fork – go easy on it, we think guacamole tastes best with chunks of the avocado.
-Stir in onions, garlic, tomato, and cilantro.
-Squeeze in lime juice.
-Add Salt to taste.
-Give a good stir. Cover and place in the fridge to chill. Allow some time – 30 minutes should do it – for the flavors to blend.

While the dish is chilling in the fridge you will have time to put together a veggie plate for dippin! My son loves to peel the cucumbers and arrange the vegetables on the plate. Tortilla chips taste good too. Enjoy!
